Hey ladies! I wanted to share a sneak peak into my weekly grocery shopping during this pandemic. I think now is the time to really focus on your health and wellbeing. So continuing to eat healthy meals is something I practice daily. In my latest YouTube video I share what I eat in a day. Hopefully this will help give you some ideas into the types of plant based meals I make. I get a lot of questions on my fibroid free diet videos on what I actually eat. All of the meals I share are fibroid friendly.
1 celery stalk
1 apple cored
Roasted seaweed at least 5 sheets
Small bowl of water
Fresh ginger grated
Mix together until smooth. You might need to add water or more coconut aminos until blend has a nice consistency.
Place individual wraps on cutting board or smooth surface
Dab a tiny bit of water or coconut aminos along the edges of the seaweed
Fill middle of wrap with your favorite veggies and roll seaweed wrap. Seal ends with coconut aminos so it doesn’t unravel
Hemp Seed Dressing
Juice of half lemon
½ cup hemp seeds
1 tbsp nutritional yeast
Any seasoning or fresh herbs you like. I’ve also used dill and cilantro for this dressing
Place all ingredients into a blender or food processor until fully combined
3 cups veggie broth
1 vegan veggie broth bullion cube
Chop all veggies and place into a pot with dried lentils, veggie broth and seasonings. Turn burner on to medium high heat cook for 40 minutes stirring throughout. Cook lentils until all veggies are tender.
Serve over cooked quinoa and eat with your favorite side dish.
